Warm Potato Salad

Bacon and celery seeds make this a favourite summer side dish to any brunch or barbecue.

Ingredients
  

  • 3 lb BCfresh red potatoes
  • ½ cup chopped lean bacon
  • ¼ cup minced BCfresh onion
  • 1 tbsp flour
  • 1 tbsp sugar
  • 2/3 cup cider vinegar
  • 1/3 cup water
  • 2 tsp salt
  • Freshly ground pepper
  • ½ tsp celery seeds

Instructions
 

  • In a saucepan combine the potatoes with cold water to cover. Bring to a boil and simmer potatoes, covered, for 20 minutes, or until tender. Drain the potatoes, cool, peel, and slice 1/8-inch thick. In a skillet cook the bacon until crisp, add the onion and cook, stirring, until onion is softened. Stir in flour, sugar, vinegar, water, salt and pepper to taste and cook for 10 minutes. In a large bowl toss the potatoes with dressing and celery seeds.
