Simple Roasted Delicata Squash

Roasting delicata squash is a quick and effortless way to enjoy its delicious flavour. The squash is dense, but becomes tender in the oven, with the edges caramelizing beautifully for a delightful contrast in texture.

Ingredients
  

  • 1 medium delicata squash (about 1 pound total)
  • 1 tablespoon extra virgin olive oil
  • 1/8  teaspoon salt
  • 1/8  teaspoon black pepper

Instructions
 

  • Pre-heat the oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper for easy clean-up.
  • To prepare the squash, cut off the ends and discard. Slice the squash lengthwise and use a spoon to scrape out the seeds. Then slice the squash into ½-inch wide half-moon slices.
  • Place the sliced delicata squash on your baking sheet. Drizzle the olive oil, then sprinkle the salt and pepper on top. Toss until the squash is fully and evenly coated in oil (add another splash if the squash seems dry). Then arrange them in a single layer.
  • Bake for about 25 to 35 minutes until the squash is tender and golden or until browned to your liking, flipping halfway.
  • Taste the squash and adjust the salt or pepper to your taste. Serve warm.

Notes

You can roast the seeds similar to as you would with roasted pumpkin seeds.
