Roasted Mashed Potatoes

This simple and delicious recipe concentrates the flavour of the potatoes making this mash even better!

Ingredients
  1. 12 BCfresh Klondike Rose potatoes
  2. 1 small yellow onion
  3. 4 cloves garlic
  4. 2 Tbsp butter
  5. 2 -4 Tbsp cream (milk can be substituted as needed)
  6. Optional - 1 tsp fresh herbs such as basil, rosemary, thyme, etc
Instructions
  1. Preheat oven to 375ºF (190ºC)
  2. Rinse Klondike Rose potatoes and coarsely chop into quarters or smaller as needed.
  3. Peel and chop onion into large chunks. Peel garlic, leave whole.
  4. Lightly grease a baking pan with olive oil. Place potatoes, onions and garlic on pan and drizzle with olive oil.
  5. Sprinkle on fresh herbs and salt and pepper to taste
  6. Bake at 375ºF (190ºC) for 50 min-1 hour, until potatoes are tender. Check by piercing with a fork, it done the potato will easily slide off the fork.
  7. Place in bowl and mash using potato masher or large fork.
  8. Add butter and cream to preference and beat until smooth. Add more salt and pepper if needed.
Notes
  1. BCfresh Klondike Rose is a yellow-fleshed, red skinned potato... perfect for a skin-on mash with great flavour and with the skin adding a dash of colour.
  2. When mashing you can use a a food processor or mixer but be careful not to overmix.
