Make weekend brunch interesting by serving potato pancakes. A side of sausages perhaps?

Ingredients
  

  • 1 large BCfresh onion peeled and finely grated
  • 6 large BCfresh potatoes washed, peeled, finely grated
  • 3 eggs slightly beaten
  • ¼ cup flour
  • 1 tsp salt
  • 1 tsp baking powder
  • Melted butter or vegetable oil

Instructions
 

  • Combine above ingredients, except butter. Ladle ¼ cup batter onto hot buttered/or oiled skillet. When pancakes are browned, flip and brown other side. Serve hot with sour cream or applesauce.
