Fantastic when Air Fried Kennebec Fries

The trick to making crispy Kennebec fries with fluffy interiors is to blanche them first. This extra step does add some time, but it is worth it. Blanching the potato sticks for 4 minutes par-cooks the fries so the air fryer can crisp up the exterior while keeping the interior moist and tender.

  • 1 lb BCfresh Kennebec potatoes
  • 2-3 tsps olive oil
  • Table salt for the water  to taste
  • Kosher salt to taste
  • Ground black pepper to taste


  • While you prepare the potatoes, bring a large pot of salted water to a boil – about 1 tsp salt per 1 cup of water.
  • Wash potatoes and cut into ½-inch sticks, leaving the skin on
  • Blanch the potatoes in boiling salted water for 4 minutes. Strain the potatoes and rinse with cold water. Dry them well with a clean kitchen towel and allow them to cool for 20 minutes.
  • Preheat air fryer to 400 °F.
  • Gently toss the cooled potato sticks with oil and place them in the air fryer basket. Air-fry for 15 minutes, shaking the basket a few times while the fries cook to help them brown evenly.
  • Season the fries with Kosher salt and cook for another 12-15 minutes, or until evenly browned. Serve hot with your favourite dipping sauce!


  • This recipe was tested using a 6-quart air fryer. For a smaller air fryer, cook in 2 batches – once both batches are fully cooked return them all at once to the air fryer for 2 minutes to warm before serving.
