Dilled Potato Salad

Serve potato salad as a light vegetarian lunch or late dinner. It’s also the perfect side dish to any grilled meats.

Ingredients
  

  • 3 lbs BCfresh Nugget potatoes cooked, drained, cut in chunks
  • ½ cup mayonnaise
  • ¼ cup yogurt or sour cream
  • ¼ cup finely chopped dill
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp freshly ground pepper
  • 1 green pepper diced
  • ½ small fennel bulb diced
  • ½ BCfresh red onion diced
  • ¼ cup shaved Asiago cheese

Instructions
 

  • In a small bowl, stir together mayonnaise, yogurt, dill, lemon juice, salt and pepper to taste. In a large bowl, combine potatoes and dressing; stir to coat. Stir in vegetables; sprinkle with Asiago. Chill, uncovered, until cooled.
