Crispy Kennebec Oven Fries

Crispy on the outside, soft, and fluffy on the inside, these Crispy Oven Fries are easy to make and will satisfy your craving for fresh-cut Kennebec fries!

  • 1.5 lbs BCfresh Kennebec potatoes
  • 2.5 tbsp olive oil
  • Kosher salt to taste
  • Ground black pepper to taste


  • Preheat oven to 450 °F with racks in the center. Line two baking sheets with parchment paper and set aside.
  • While you prepare the potatoes, bring a large pot of salted water to a boil – about 1 tsp salt per 1 cup of water.
  • Wash potatoes and cut into ½-inch sticks, leaving the skin on
  • Blanch the potatoes in boiling salted water for 4 minutes. Strain the potatoes and rinse with cold water. Place potatoes on a clean kitchen towel, pat dry, and cool for 10 minutes.
  • While the potatoes are cooling, place the sheet pans into the oven to preheat. In a large bowl, gently toss the cooled potato sticks with oil. 
  • Remove the sheet pans from the oven and spread the potatoes evenly to prevent crowding. Cook for 15 minutes.
  • Gently flip the fries, rotate the pans, and bake for another 9-12 minutes or until evenly browned with a few darker spots. Remove from oven and season with salt while hot. Serve immediately.


The trick to making crispy Kennebec fries with fluffy interiors is to blanche them first. This extra step does add some time, but it is worth it. Blanching the potato sticks for 4 minutes par-cooks the fries so the oven can crisp up the exterior while keeping the interior moist and tender.
