Carrot Cake

A generational favourite, carrot cake is welcome at any time, not just for a celebration. The carrots and pineapple work together to make this a moist and wholesome cake.

Ingredients
  1. 1 cup flour
  2. ¼ tsp salt
  3. 1 tbsp baking powder
  4. 2 eggs
  5. ½ cup vegetable oil
  6. 1 cup BCfresh carrots, grated
  7. ½ cup walnuts, chopped
  8. ½ cup coconut
  9. 1 tsp cinnamon
  10. 1 small can crushed pineapple, drained
  11. Cream Cheese Icing
  12. 2 tbsp butter
  13. 3 tbsp cream cheese
  14. 1 cup icing sugar
  15. ½ tsp vanilla
  16. Juice of ½ orange or lemon
  17. Cream the butter and cream cheese and add the icing sugar. Add vanilla and juice. Spread over cooled loaf.
Instructions
  1. Blend the flour, salt, and baking powder together. Beat the eggs and oil and stir into the flour. Add the carrots, walnuts, coconut, pineapple, and cinnamon. Mix well and pour into greased loaf pan. Bake at 350°F for 25 to 30 minutes. Cool before icing.
