Blistered Green Beans

  • 3 tbsp olive oil extra-virgin
  • 1 lb green beans washed, trimmed, and patted dry to remove surface moisture
  • 2 cloves garlic minced
  • 1 tsp red pepper flakes crushed
  • Kosher salt


  • Heat oil in a large skillet over high until shimmering.
  • Add green beans and cook without stirring for about 3 minutes. Beans will start to brown and blister.
  • Turn beans with tongs and redistribute so they brown evenly. Continue to cook, turning occasionally, until browned and blistered all over and tender, about 5 minutes longer.
  • Season with salt. Add garlic and red pepper flakes. Continue to cook, occasionally tossing occasionally, just until garlic turns golden.
  • Transfer beans to a platter. Spoon garlic-pepper flake mixture over beans and some oil too; season with salt.
