Beets
The word “beets” conjures up an image of red beets, however, not all beets are red/purple in colour. BCfresh grows many colours and varieties of beets including Red, Golden and Candy Cane. They are all nutritious and sweet. Raw, they are crunchy and when cooked they turn soft and buttery.
Red Beets
When working with red beets, wear gloves, or use lemon juice to remove red stain from hands.
Select:
Medium-sized
Well-shaped and clean
Tops removed (beets are topped to prevent dehydration)
Smooth outer skin with a suede-like nap
Local BCfresh beets are usually available year round.

Soups and stews

Golden Beets
Golden beets are stain-free, and sweeter than their red cousin. Some people think they are the ugliest variety.
