BCfresh & The Gourmet Warehouse
BCfresh has teamed up with The Gourmet Warehouse and Buy BC to make your home cooking fresher and easier than ever! Each week you can find a brand-new recipe from Caren McSherry featuring locally-sourced fruits and vegetables from right here in BC, fresh from just down the road.

Grilled Corn on the Cob with Smoky Lime Butter
Forget boiling corn – elevate the sweet flavour of BCfresh corn on the cob by low, slow grilling on your barbecue or grill pan. Fancy food magazines always display the grilled corn husks creatively tied back, and it looks lovely. That may work for magazines, but not in reality! When the corn is ready, it is sizzling hot. Skip the scalded fingertips and just keep it real. Peel the corn, rub it lightly with olive oil, and lay it on the barbecue. No burning husks to deal with, just easy-to-serve and, more importantly, easy-to-eat corn.
Zucchini Zoodles with Cherry Tomatoes & Garlic
When the harvest peaks, this is one of the easiest ways to serve BCfresh zucchini and has all the flavours of late summer with the cherry tomatoes and garlic. Bulk up the dish by adding a pasta like spaghetti or linguini. It’s a vegetable-forward dinner that’s on the table in mere minutes!
No-Bake Rhubarb Mascarpone Tart
Caren loves a no-bake recipe as it makes life just that little bit easier in the kitchen. The crust takes a departure from baking it to simply chilling it. Give this a go – BCfresh rhubarb, luscious mascarpone cheese, and comes together in no time at all.
Cauliflower Steaks with Capers and Caramelized Lemon
Forget the steamed florets – bring on thick slices of BCfresh cauliflower and layer them with lemons and capers! This is new-wave cauliflower at its best! This dish marries well with fish and is a great holiday side.
Quinoa Salad with Charred Broccoli & Carrots
Super grain, super food, and super protein that tastes super good! I combine it with charred BCfresh broccoli and carrots to bring it into the modern culinary world. This salad is a perfect choice for lunch or as a side for any main dish.
Rutabaga with Crispy Shallots
The rutabaga is often overlooked, but it a sweet and nutrient-packed root vegetable, grown right here in BC! With the addition of crispy shallots, BCfresh rutabaga is a revelation in taste and composition. It is truly an explosion of massive flavour that will change your opinion on strong-tasting root vegetables.
Gruyère Cheese Stacked Potatoes
Take BCfresh red potatoes to new heights! The intense, nutty flavour of Gruyère cheese makes almost everything taste better, especially potatoes. This dish is so easy you can almost do it blindfolded! I always use a silicone muffin pan to make the clean-up a breeze.
Balsamic Roasted Kabocha Squash and Beets
Kabocha squash is one of those seasonal treats that’s only available for a short time each year. Roasting brings out the inherent natural sugars of the BCfresh squash and beets and gives it star status.
